Kale Salad

Kale Salad


1 bunch of kale stems removed and finely chopped. 

Add ons: 

 2/3 cup of coconut corn (cut fresh corn from the cob and cook in coconut milk)

 1/2 cup of cooked quinoa

 1/3 cup of red onion (diced)

 1 whole avocado (diced)

 1/4 cup of currants (next to the raisins in the store!).


1/2 cup of olive oil 

2 tablespoons of coconut aminos*

1 tablespoon of African bird pepper

juice 1/2 of a lime

1/4 cup of sun dried tomatoes 

1 teaspoon Sea salt or Himalayan salt.  


  1. Make the spicy dressing by tossing all the ingredients into a food processor.
  2. Serve on top of kale with the add-ons.
